You can use the production cheats to change all your productions or just one of them. If you don't want to increase all of them, but just one, move your mouse over the production bar ‘x per day/week/...’ in the production list and wait until the small tooltip appears. Now use the cheat ‘Mark hovered production’ to save this one production. The two cheats for the selected production will then only affect this one production and none others! Alternatively, you can simply change all productions, whereby the cheat also has a direct positive effect on the construction of railway tracks.
